Prepare the Horchata Cream
In a mixing bowl, combine horchata, heavy cream, and powdered sugar. Whip until soft peaks form. Set aside.
Prepare the Egg Mixture
In a shallow dish, whisk together eggs, milk, vanilla extract, and cinnamon until well combined.
Soak the Croissants
Slice croissants in half and dip them into the egg mixture, allowing them to soak for about 30 seconds on each side.
Cook the Croissants
In a skillet, melt butter over medium heat. Cook the soaked croissants for about 3-4 minutes on each side until golden brown.
Serve
Layer the croissant halves on a plate, fill with horchata cream, drizzle with warm maple syrup, top with whipped cream and mixed berries.
