Prepare the Short Ribs
Preheat your oven to 300°F (150°C). Season the short ribs generously with salt and black pepper.
Add Spices and Liquids
Stir in the ancho chili powder, red wine, beef broth, thyme, and bay leaves. Bring to a simmer.
Prepare Cheddar Chive Whipped Potatoes
While the ribs are cooking, peel and chop 2 pounds of potatoes. Boil in salted water until tender, about 15 minutes. Drain and return to the pot. Mash with 1 cup of heavy cream, 1 cup of shredded cheddar cheese, and ¼ cup of chopped chives. Season with salt and pepper to taste.
Prepare Crispy Brussels Sprouts
Trim and halve 1 pound of Brussels sprouts. Toss with olive oil, salt, and pepper. Roast in the oven at 400°F (200°C) for 20-25 minutes until crispy and golden.
