Chimichurri Sauce
Method
Preparation
Make the Chimichurri Sauce
In a medium bowl, combine the chopped parsley, cilantro, minced garlic, red wine vinegar, olive oil, red pepper flakes, salt, and black pepper. Mix well until all ingredients are thoroughly combined.
Prepare the Cauliflower
Preheat your oven to 425°F (220°C). Cut the cauliflower into florets and place them on a baking sheet. Drizzle with olive oil and season with salt and pepper. Toss to coat evenly.
Roast the Cauliflower
Roast the cauliflower in the preheated oven for 25-30 minutes or until golden brown and tender, flipping halfway through the cooking time.
Serve
Once the cauliflower is roasted, remove it from the oven and drizzle generously with the chimichurri sauce. Serve warm.
