Carne Asada Preparation

Marinate the Steak

In a bowl, combine the skirt steak with chimichurri sauce, salt, and black pepper. Marinate for at least 1 hour, preferably overnight for best flavor.

Prepare the Black Beans

Heat the black beans in a saucepan over medium heat until warmed through. Stir in cotija cheese until melted.

Grill the Steak

Preheat a grill to high heat. Grill the marinated skirt steak for about 4-5 minutes on each side for medium-rare, or until desired doneness is achieved. Let rest for 5 minutes before slicing.

Fry the Plantains

Peel and slice the plantains diagonally. In a skillet, heat oil over medium heat and fry plantain slices until golden brown on both sides. Drain on paper towels.

Cook the Potatoes

Dice the potatoes and boil in water until tender. Drain and sauté in a skillet with olive oil, salt, and black pepper until crispy.

Warm the Tortillas

Warm the corn tortillas on the grill or in a skillet until pliable.

Serve sliced carne asada with warmed tortillas, black beans topped with cotija, fried plantains, crema, skillet potatoes, avocado slices, and green chile salsa.
