Prepare the Shrimp
Rinse the rock shrimp under cold water and pat dry with paper towels.
Make the Battering Mix
In a large bowl, mix together flour, cornmeal, and Cajun seasoning. In another bowl, pour buttermilk.
Batter the Shrimp
Dip each shrimp into the buttermilk, then coat with the flour mixture. Place on a plate and let rest for 10 minutes.
Heat the Oil
In a large pot, heat vegetable oil to 350°F (175°C) over medium-high heat.
Fry the Shrimp
Fry the shrimp in batches for 3-4 minutes or until golden brown and crispy. Remove and drain on paper towels.
Prepare the Aioli
In a small bowl, mix together sriracha sauce, lime juice, and a pinch of salt to create the sriracha lime aioli.
Make the Ancho Cabbage Slaw
In a bowl, mix shredded cabbage with ancho chili powder, salt, and a drizzle of olive oil.
Grill the Citrus
Cut lime in half and grill for a few minutes until charred.
