Soak Cashews

Soak the cashew nuts in warm water for about 15-20 minutes to soften them for blending.

Chop Vegetables

Finely chop the onions and tomatoes, and slit the green chilies.

Cut Paneer

Cut the paneer into cubes, about 1-inch in size.

Cooking

Sauté Onions

In a pan, heat oil or ghee over medium heat. Add cumin seeds and let them splutter. Add chopped onions and sauté until they are golden brown.

Add Tomatoes and Spices

Add the chopped tomatoes and ginger-garlic paste to the pan. Cook until the tomatoes soften. Stir in turmeric powder, red chili powder, and salt. Cook for another 2-3 minutes.

Blend Cashew Cream

Drain the soaked cashew nuts and blend them with 200 ml of water to make a smooth paste. Add this paste to the onion-tomato mixture.

Add Paneer

Gently fold in the cubed paneer and let it simmer for 5 minutes on low heat.

Finish with Cream and Garam Masala

Stir in the fresh cream and garam masala. Mix well and cook for another 2-3 minutes until the sauce thickens slightly.

Garnish and Serve

Garnish with chopped green chilies or fresh coriander if desired. Serve hot with naan, roti, or rice.
