    Activate yeast and combine liquids

    In a small bowl or measuring cup, combine warm milk and warm water (should be about 105–115°F / 40–46°C). Stir in 1 tsp granulated sugar and the instant yeast. Let sit 5–7 minutes until foamy. In a separate bowl, whisk together egg and melted butter.

    Mix dough

    In a large mixing bowl (or stand mixer bowl), whisk together 2.5 cups flour, 2 tbs granulated sugar, and 1/2 tsp salt. Add the foamy yeast mixture and the egg-butter mixture. Stir with a wooden spoon until a shaggy dough forms. If using a stand mixer, use the dough hook on low for 2–3 minutes.

    Knead

    Turn dough onto a lightly floured surface and knead for 6–8 minutes until smooth and elastic (or knead in mixer 4–5 minutes). Add up to 2 tbs additional flour only if dough is excessively sticky. The dough should be soft and slightly tacky.

    First rise

    Place dough in a lightly oiled bowl, turning to coat. Cover with plastic wrap or a clean towel and let rise in a warm draft-free spot until doubled, about 60–75 minutes.

Filling & Shaping

    Prepare filling

    While dough rises, mix 1/2 cup packed brown sugar, 1 tsp ground cinnamon and 1 tsp vanilla extract in a small bowl. Set 2 tbsp room-temperature butter aside for spreading.

    Roll and fill

    After the dough has doubled, gently punch it down and turn it out onto a lightly floured surface. Roll dough into a rectangle about 12x8 inches and roughly 1/4 inch thick. Spread the 2 tbsp softened butter evenly over the dough. Sprinkle the cinnamon-brown sugar mixture evenly across the buttered surface, pressing lightly so it adheres.

    Cut into sticks

    Starting at a long side, tightly roll the rectangle into a log. Use a sharp knife or bench scraper to cut the log crosswise into 12 equal pieces. For a different texture, you can leave unrolled and simply slice into 12 strips (about 1-inch wide) and twist each strip twice before placing on the pan.

    Arrange for second rise

    Place the 12 sticks on a parchment-lined baking sheet about 1 inch apart. Cover loosely with plastic wrap or a towel and let rise for 25–30 minutes until puffy.

    Preheat and egg wash

    Preheat oven to 375°F (190°C). Just before baking, brush the tops of the sticks lightly with the egg wash (1 beaten egg with 1 tbs water). If desired, sprinkle coarse sugar or sanding sugar on top.

    Bake

    Bake for 12–15 minutes until golden brown on top and cooked through. Rotate the sheet halfway through if your oven runs unevenly. Internal texture should be soft and slightly tender.

    Make glaze

    While sticks bake, whisk together 3/4 cup powdered sugar and 2 tsp milk until smooth. If the glaze is too thick, add milk a few drops at a time; if too thin, add a little more powdered sugar. Taste and add a tiny pinch of salt if desired.

    Glaze and serve

    When sticks come out of the oven, let cool on the pan 5 minutes. Transfer to a cooling rack placed over parchment. Drizzle the prepared glaze over the warm sticks using a spoon or fork. Allow glaze to set 10–15 minutes, then serve warm or at room temperature.
