Prepare chicken
Trim any fat from the chicken and cut into bite-sized pieces about 1 to 1 1/4 inch. Aim for uniform pieces so they cook evenly (about 24–30 pieces from 1 lb).

Marinate
In a medium bowl combine 1/2 cup plain yogurt or buttermilk, 1/2 tsp salt, 1/4 tsp black pepper, 1/2 tsp garlic powder and 1/4 tsp onion powder. Add the chicken pieces and stir so each piece is coated. Cover and refrigerate for at least 15 minutes and up to 2 hours. (Marinating softens and slightly flavors the chicken for kids.)

Mix dry ingredients
On a large plate or shallow bowl, whisk together 3/4 cup all-purpose flour, 3/4 cup breadcrumbs or panko, 1/4 cup grated Parmesan, 1/2 tsp paprika, 1/2 tsp dried Italian seasoning (or parsley), 1/2 tsp salt and 1/4 tsp black pepper until evenly combined.

Set up breading station
In a separate shallow bowl whisk 1 large egg with 2 tablespoons milk. Remove marinated chicken from the fridge and let any excess marinade drip off before breading.

Bread the pieces
Working in batches, dredge each chicken piece first in the flour-breadcrumb mixture, pressing gently so the coating adheres. For a thicker coating, dip the floured piece into the egg wash, then back into the dry mix, pressing again. Place breaded pieces on a plate ready to cook.

Shallow fry (recommended for quickest, crispier bites)
Heat a large nonstick skillet over medium heat and add about 3 tablespoons oil. When oil is hot but not smoking (a breadcrumb flick should sizzle), add breaded chicken pieces in a single layer without crowding—work in batches. Cook 2–3 minutes per side until golden brown and internal temperature reaches 165°F (74°C). Transfer to a paper-towel-lined plate to drain. Total cook time per batch about 5–6 minutes.

Oven-bake (lighter, hands-off option)
Preheat oven to 425°F (220°C). Place breaded pieces on a baking sheet lined with parchment and lightly spray the tops with cooking spray. Bake 12–15 minutes, flipping once halfway, until golden and internal temp is 165°F (74°C). If using panko, you may broil 1–2 minutes at the end to crisp, watching closely to avoid burning.

Let cooked bites rest 2 minutes, then transfer to a serving plate. Serve warm with small bowls of ketchup, honey mustard, or ranch for dipping. For a kid-friendly plate, add carrot sticks, apple slices, or steamed peas on the side.
