Toast oats (optional)

In a medium heavy-bottomed saucepan, dry-toast the steel-cut oats over medium heat, stirring frequently, until they smell nutty and are lightly golden, about 2–3 minutes. This step is optional but deepens flavor.

Boil liquids

Add 3 cups water, 1 cup milk and 1 tsp salt to the pot with the oats and bring to a gentle boil over medium-high heat.

Simmer

Reduce heat to low, maintain a very gentle simmer, and cook uncovered, stirring occasionally to prevent sticking. Simmer until the oats are tender but slightly chewy, about 20–30 minutes depending on desired texture. For creamier oats, simmer longer and stir more frequently.

Finish and keep warm

When the oats reach your preferred consistency, remove from heat and stir in 1 tsp butter (optional) and 1 tsp ground cinnamon if using. Taste and adjust salt if needed. Keep covered and warm while you prepare the preserved fruit and toppings.

Prepare fruit

If using larger fruit (apples, pears, stone fruit), core and dice into 1/2-inch pieces. If using berries, leave whole or halve large berries.

Poach fruit

In a small saucepan, combine 1 cup diced seasonal fruit, 2 tbsp maple syrup, 2 tbsp water and 1 tsp lemon juice. Bring to a gentle simmer over medium heat.

Reduce to preserve

Simmer until the fruit is just tender and the syrup is slightly reduced and glossy, about 6–8 minutes for apples/pears or 3–4 minutes for berries. Remove from heat and let cool slightly; the fruit will keep some structure (not a puree).

Make ahead / storage

You can make this fruit up to 3 days ahead and refrigerate in an airtight container. Rewarm gently before serving, adding a splash of water if syrup has thickened too much.

Toppings & assembly

Toast almonds

In a small dry skillet over medium heat, toast 1 tbsp sliced or chopped almonds, stirring frequently, until fragrant and lightly golden, about 2–3 minutes. Remove from skillet to stop cooking.

Assemble bowls

Divide the steel-cut oatmeal between 2 bowls (recipe makes about 2 generous servings). Spoon the preserved seasonal fruit over each bowl.

Finish with maple & almonds

Drizzle about 1 tbsp maple syrup over each serving (adjust to taste), sprinkle the toasted almonds on top, and add an extra pinch of cinnamon or a small pat of butter if desired.

Serve

Serve immediately while warm. Leftover oatmeal can be refrigerated up to 4 days; reheat with a splash of milk or water to loosen.
