Method
Prepare Glass and Smoke (optional)
Prepare glass
Select a rocks glass. If using a smoker, place the glass upside down or cover the glass with the smoker's funnel/cover to capture smoke. If not smoking, skip to chilling step.
Generate smoke (optional)
Load smoking gun with 1/2 tablespoon wood chips (apple, cherry, or oak recommended). Ignite and blow smoke into the covered glass or cloche for 10–20 seconds to fill the interior with smoke. Let the smoke sit in the glass while you prepare the cocktail to increase aroma.
Build Cocktail
Chill your mixing glass and the (smoked) rocks glass by filling with ice and letting sit 30–60 seconds; discard this ice just before straining.
Add 2 oz Smoked Kentucky 74 NA Bourbon, 3 dashes NOA Non-Alcoholic Orange Bitters, and 0.25 oz simple syrup to a mixing glass or shaker filled with fresh ice.
If you smoke the glass: uncover the smoked rocks glass and place a single large ice cube into it. If you did not smoke the glass, place the same large ice cube into a chilled rocks glass.
Double-strain or fine-strain the stirred cocktail over the large ice cube in the prepared glass to remove any small shards of ice or solids.
Finish & Garnish
Take an orange peel strip. Hold it over the drink with the outer (oily) side facing down about 3–4 inches above the surface and give a firm squeeze to express oils across the cocktail; then run the peel’s rim around the glass edge and drop it into the drink or rest it on the ice.
Serve: present the cocktail immediately with a small napkin. Sip slowly to appreciate the balance of smoky non-alcoholic bourbon, orange bitters, and light sweetness.
