Assemble and warm croissants

Prep croissants

Preheat the oven to 350°F (175°C). If croissants are refrigerated, let them sit at room temperature for 10–15 minutes. Using a sharp knife, slice each croissant horizontally about two-thirds of the way through to create a hinge so the top stays attached.

Make spread

In a small bowl combine the Dijon mustard, mayonnaise, honey (if using) and freshly ground black pepper. Stir until smooth. Taste and adjust: add more honey for sweetness or more mustard for tang.

Butter croissants (optional)

Melt the unsalted butter in a small skillet or microwave. Brush the cut interior surfaces of each croissant lightly with melted butter. This adds richness and helps crisp the interior during warming.

Layer fillings

Open each croissant and spread about 1/2 tablespoon of the mustard-mayo mixture evenly on the bottom half (about 2 tsp per croissant). Place two slices of deli ham folded if needed to fit, then two slices of Swiss cheese on top of the ham. Sprinkle a pinch of chopped parsley or chives over the cheese if using.

Warm and melt

Place the assembled croissants on a baking sheet lined with parchment paper. Bake in the preheated oven for 6–10 minutes, until the croissants are warmed through and the cheese is melted. For a crisper top, switch the oven to broil for 30–60 seconds — watch closely to avoid burning.

Finish and serve

Remove croissants from the oven and let rest for 1 minute. Close the croissants gently, slice in half if desired, and serve immediately. Add an extra crack of black pepper to taste.
