Sweeten yogurt

In a medium bowl, combine the organic yogurt, honey (or maple syrup) and vanilla extract. Stir gently until smooth and evenly sweetened. Taste and adjust sweetness if desired. Cover and refrigerate while preparing the crumble and berries.

Nut & oat crumble (granola)

Preheat oven

Preheat the oven to 325°F (160°C). Line a baking sheet with parchment paper.

Mix dry ingredients

In a large bowl, combine the rolled oats, chopped almonds, chopped walnuts, shredded coconut (if using), brown sugar, ground cinnamon and salt. Toss to distribute evenly.

Add wet ingredients

Add the maple syrup and neutral oil to the dry mixture. Stir with a spatula until everything is evenly coated and clumps begin to form.

Bake granola

Spread the mixture in an even layer on the prepared baking sheet. Bake for 15–20 minutes, stirring once halfway through, until golden brown and fragrant. Watch carefully in the last 5 minutes to prevent burning.

Cool and crisp

Remove the baking sheet from the oven and let the granola cool completely on the sheet; it will crisp as it cools. Break into bite-sized clusters once cooled. Store in an airtight container for up to 1 week.

Seasonal berries & assembly

Prep berries

Rinse the strawberries, blueberries and raspberries under cold water. Drain and pat dry with paper towels. Hull and quarter the strawberries; leave smaller berries whole.

Layer parfaits

Divide the sweetened yogurt among 4 serving glasses or bowls, spooning about 3/4 cup yogurt into each. Add a layer of granola (about 1/4 cup) on top of the yogurt, then a spoonful of mixed berries (about 2–3 tablespoons). Repeat with another 1/4 cup yogurt, another 1/4 cup granola and more berries to create 2–3 visible layers. Reserve a small handful of granola and berries for garnish.

Finish and serve

Top each parfait with the reserved granola and a few fresh berries. Drizzle a small amount of honey or maple syrup over each (about 1/4 teaspoon to 1 teaspoon, to taste) and garnish with a mint leaf if using. Serve immediately so the granola stays crisp. If preparing ahead, keep granola separate and add within 30 minutes of serving to maintain crunch.
