Combine and chill
Add Ketel One vodka, Giffard Pamplemousse, St. Germain, fresh lemon juice and simple syrup into a cocktail shaker. Add enough ice to fill the shaker (~1 cup).
Shake
Shake vigorously for 12–15 seconds, until the outside of the shaker is well-chilled and slightly frosted. This both chills and lightly dilutes the mixture.
Strain
Double-strain the shaken mixture into a chilled coupe or wine glass (to remove small ice shards).
Finish
Top with Cava
Slowly pour ~3 oz of chilled Cava into the glass, pouring around the sorbet so it gently fizzes and integrates without overflowing. Pouring slowly preserves the effervescence.
Garnish and serve
Finish with a small grapefruit twist or an edible flower perched on the sorbet. Serve immediately with a small cocktail spoon or straw so the guest can break the sorbet into the sparkling mixture.
