Prepare oven and dry ingredients
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper. In a large bowl whisk together the all-purpose flour, baking powder, granulated sugar, and sea salt until evenly combined.
Cut in the butter
Add the cold cubed unsalted butter to the flour mixture. Using a pastry cutter, two forks, or your fingertips, work the butter into the flour until the mixture resembles coarse crumbs with some pea-sized butter pieces remaining (this creates flakiness).
Combine wet ingredients
In a small bowl whisk together the egg, 3 tablespoons heavy cream, 3 tablespoons whole milk, and vanilla extract. Pour the wet mixture into the flour-butter mixture and gently fold with a spatula until a shaggy dough forms. Do not overmix; dough should hold together when squeezed but still be slightly sticky. If dough seems very dry, add up to 1 tablespoon additional milk.
Shape and cut
Turn the dough out onto a lightly floured surface. Pat into a circle about 1 inch (2.5 cm) thick. Use a 2.5–3 inch round cutter to stamp out scones, pressing straight down (don’t twist). Gather scraps, gently re-pat and cut additional scones (do not overwork the dough). Place scones 1 inch apart on the prepared baking sheet.
Brush and bake
Brush the tops with a little heavy cream (from the 3 tbsp reserved) or milk to encourage browning. Bake for 14–18 minutes until golden brown on top and a toothpick inserted into the center comes out clean. Rotate pan halfway through baking for even color.
Cool
Remove scones to a wire rack and cool for 10–15 minutes before serving warm. Dust lightly with powdered sugar if desired.
Clotted-Cream Style Spread
Make quick clotted-style cream
Chill a medium bowl and beaters in the freezer for 5 minutes. Pour the very cold heavy cream into the chilled bowl and whip on medium-high until soft peaks form (about 1–2 minutes). Fold in the mascarpone cheese, icing sugar, and vanilla until smooth and fluffy. Keep refrigerated until ready to serve. This will mimic clotted cream texture and remain spreadable.

Cook the strawberries
Place the chopped strawberries, granulated sugar, and lemon juice in a small saucepan over medium heat. Cook, stirring occasionally, until the strawberries release their juices and the mixture begins to thicken, about 8–10 minutes. If you prefer chunkier preserves, mash lightly with a fork; for smoother, simmer a couple minutes longer.
Cool
Remove from heat and let cool to room temperature. Transfer to a small bowl and refrigerate until ready to serve. The jam will thicken further as it cools.
Finger Sandwiches
Prepare bread and spreads
Trim crusts from the white sandwich bread. Lightly butter one side of six slices (this prevents sogginess).

Spread about 1 tablespoon softened cream cheese mixed with half the chopped dill onto three buttered slices. Layer thin cucumber slices evenly, season lightly with salt and a pinch of pepper, then top with remaining bread slices. Trim edges and cut each sandwich into 3 finger-length rectangles (yielding 9 small pieces).
Smoked salmon sandwiches
On three more buttered slices spread a thin layer of remaining cream cheese. Top with smoked salmon slices and a little lemon zest. Close with remaining bread, trim edges, and cut each into 3 fingers (9 pieces).
Egg salad sandwiches
If your egg salad is prepared, spread roughly 2–3 tablespoons on the remaining bread slices (buttered side down). Close, trim, and cut into finger sandwiches. Adjust quantity if needed to yield about 9 pieces total for this variety.

Plating & Serving
Arrange warm scones on a serving platter with small bowls of the clotted-style cream and chilled strawberry preserves. Place finger sandwiches on a separate tier or platter, grouped by type. Dust scones lightly with powdered sugar just before serving if desired. Serve tea hot alongside and enjoy immediately so scones are warm and sandwiches are fresh.
