Prepare honey syrup (if not ready)

Combine equal parts honey and warm water (e.g., 1/4 cup honey + 1/4 cup warm water). Stir until honey fully dissolves. Cool before using. Makes more than needed; refrigerate up to 2 weeks.

Make ginger-elderflower syrup (if not using store-bought)

In a small saucepan combine 1/2 cup sliced fresh ginger, 1/2 cup sugar, 1/2 cup water and 2 tablespoons elderflower cordial or 1 tablespoon dried elderflower. Simmer gently 8–10 minutes until fragrant and syrupy. Cool and strain. Use 1/2 oz for each cocktail; refrigerate up to 2 weeks.

Build the drink

Fill a tall glass (collins or highball) with ice (about 1 cup). Add 0.5 oz fresh lemon juice and 0.5 oz honey syrup. Pour in 0.5 oz ginger-elderflower syrup and 2 oz kombucha. Gently stir 4–6 times to mix the syrups with the kombucha and lemon without flattening carbonation.

Top with tonic

Slowly top the glass with 3 oz chilled tonica (or light tonic water) to preserve effervescence. Give one gentle stir just to integrate.

Garnish & Serve

Nestle a thin lemon wheel on the side of the glass and float a slice of candied or fresh ginger on top. If available, add a small elderflower sprig or edible flower for aroma and presentation.

Serve immediately with a straw or stirrer. For a nonalcoholic/low‑alcohol variation use alcohol-free tonic and a nonalcoholic kombucha (this recipe is already nonalcoholic if kombucha is non-alc). Adjust honey syrup to taste.
