    Sanitize 2 new French oak barrels to prepare for fermentation. Ensure they are free from any contaminants.

Fermentation Process

    Crush Grapes

    Crush the harvested grapes to extract juice, then transfer the juice to the sanitized oak barrels.

    Add Yeast and SO2

    Sprinkle the yeast packet over the grape juice in the barrel. Add 50 ppm of sulfur dioxide to prevent unwanted fermentation.

    Monitor Fermentation

    Allow the mixture to ferment for 7 to 14 days, monitoring the fermentation temperature and sugar levels regularly.
