Preparation

    Preheat the Oven

    Preheat your oven to 190°C (375°F).

    Prepare the Apples

    Peel, core, and cut the apples into quarters. Toss them in a bowl with lemon juice to prevent browning.

Caramelizing

    Make the Caramel

    In a 9-10 inch oven-safe skillet, melt the butter over medium heat. Add the sugar and stir until dissolved, cooking until it turns a golden brown color, about 5 minutes.

    Add the Apples

    Carefully add the apple quarters to the skillet, arranging them in a circular pattern. Cook for about 10-15 minutes, turning the apples occasionally, until they are tender and coated in caramel.

    Add Spices

    Sprinkle the cinnamon and a pinch of salt over the apples and add the vanilla extract. Stir gently to combine.

Assembling and Baking

    Prepare the Puff Pastry

    Roll out the puff pastry on a lightly floured surface until it is slightly larger than the skillet.

    Cover the Apples

    Place the puff pastry over the apples in the skillet, tucking the edges in to fit snugly.

    Bake the Tarte Tatin

    Transfer the skillet to the preheated oven and bake for about 25-30 minutes or until the pastry is golden brown and puffed.

Serving

    Invert the Tarte

    Remove the skillet from the oven and let it cool for about 5 minutes. Carefully invert the skillet onto a serving plate to release the tart.

    Slice and serve warm, optionally with whipped cream or vanilla ice cream.
