    Prepare the Ingredients

    Chop the onion, green bell pepper, and celery. Mince the garlic. Slice the Andouille sausage.

    Cook the Rice (if using)

    Prepare cooked white rice according to package instructions and set aside.

Cooking

    Sauté the Vegetables

    In a large pot, heat the olive oil over medium heat. Add the chopped onion, green bell pepper, and celery, and sauté for about 5 minutes until they are softened.

    Add Sausage and Garlic

    Stir in the sliced Andouille sausage and minced garlic, cooking for an additional 3-4 minutes until fragrant.

    Combine Remaining Ingredients

    Add the chicken broth, canned diced tomatoes (with juice), bay leaves, cayenne pepper, thyme, salt, and black pepper to the pot. Stir well to combine.

    Simmer the Gumbo

    Bring the mixture to a gentle simmer. Reduce the heat to low and let it cook uncovered for about 30 minutes, stirring occasionally.

    Add Seafood

    After 30 minutes, add the shrimp and crab meat to the pot. Cook for an additional 5-10 minutes until the shrimp are pink and cooked through.

    Adjust Seasoning

    Taste and adjust the seasoning with additional salt and black pepper if necessary. Remove bay leaves before serving.
