Method

Pasta Preparation

  1. 1

    Make the Dough

In a large mixing bowl, combine the all-purpose flour and salt. Make a well in the center and crack in the eggs. Using a fork, gradually incorporate the flour into the eggs until a dough begins to form.

  2. 2

    Knead the Dough

Transfer the dough to a floured surface. Knead it for about 10 minutes until it is smooth and elastic. Wrap it in plastic wrap and let it rest for 30 minutes.

Filling Preparation

  1. 3

    Prepare the Filling

In a bowl, mix together the ricotta cheese, grated Parmesan, cooked spinach, nutmeg, and black pepper until well combined. Set aside.

Assembly

  1. 4

    Roll Out the Dough

After the dough has rested, divide it into four pieces. Roll out each piece into thin sheets using a pasta machine or rolling pin.

  2. 5

    Fill the Pasta

Cut the pasta sheets into rectangles. Place a tablespoon of filling on one half of each rectangle. Fold the other half over the filling and press the edges to seal, ensuring no air is trapped inside.

Cooking

  1. 6

    Cook the Pasta

Bring a large pot of salted water to a boil. Carefully drop the filled pasta into the boiling water and cook for about 4-5 minutes or until they float to the surface. Remove them with a slotted spoon.

  2. 7

    Prepare the Sauce

In a skillet, melt the butter over medium heat. Add the minced garlic and sage leaves, cooking until the garlic is fragrant and the sage is crispy. Season with salt and pepper to taste.

Serving

  1. 8

    Serve the Dish

Toss the cooked pasta in the butter sauce until well coated. Serve immediately, garnished with additional grated Parmesan if desired.
