    Prepare the Ingredients

    Dice the chicken thighs into bite-sized pieces. Slice the Andouille sausage into rounds. Chop the onion, bell pepper, celery, and garlic. Set aside.

Cooking

    Sauté the Proteins

    In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced chicken and sausage, cooking until the chicken is browned and the sausage is lightly crisp, about 5-7 minutes. Remove the proteins from the pot and set aside.

    Cook the Vegetables

    In the same pot, add the chopped onion, bell pepper, celery, and garlic. Sauté until the vegetables are softened, about 4-5 minutes.

    Combine Ingredients

    Stir in the diced tomatoes, Cajun seasoning, bay leaves, salt, and black pepper. Cook for an additional 2 minutes to let the spices bloom.

    Add Rice and Broth

    Add the rice to the pot, stirring to combine it with the vegetables and spices. Pour in the chicken broth and bring the mixture to a boil.

    Simmer the Jambalaya

    Once boiling, reduce the heat to low, return the chicken and sausage to the pot, and cover. Let it simmer for 20-25 minutes, or until the rice is tender and has absorbed the liquid.

    Final Touches

    Remove the bay leaves. Taste and adjust seasoning if necessary. Fluff the jambalaya with a fork.

    Chop the green onions and parsley. Serve the jambalaya hot, garnished with green onions and parsley on top.
