Soup Preparation

    Sauté the Onions

    In a large pot, melt the unsalted butter over medium heat. Add the yellow onions and cook, stirring frequently, for about 30 minutes until they are soft and caramelized.

    Add Garlic and Deglaze

    Add minced garlic cloves and cook for an additional 2 minutes. Pour in the dry white wine to deglaze the pot, scraping up any browned bits from the bottom.

    Add Broth and Herbs

    Stir in the beef broth, fresh thyme, bay leaf, salt, and black pepper. Bring the mixture to a boil, then reduce the heat and let it simmer for 30 minutes.

    Remove Bay Leaf

    After the soup has simmered, remove the bay leaf and adjust seasoning to taste if necessary.

Topping Preparation

    Prepare Baguette

    While the soup is simmering, preheat your oven to 350°F (175°C). Place the baguette slices on a baking sheet and toast in the oven for 10 minutes until golden brown.

    Ladle the hot soup into oven-safe bowls. Top each bowl with a toasted baguette slice, followed by a generous amount of Gruyere and Parmesan cheese.

    Place the bowls under the broiler in your oven for about 3-5 minutes, or until the cheese is bubbly and golden brown. Keep a close eye to prevent burning.
