Prepare the vegetables
Dice the onion, green bell pepper, celery, and mince the garlic cloves.

Add garlic
Add the minced garlic and sauté for another minute until fragrant.

Combine ingredients
Stir in the crawfish tails, chicken stock, tomato paste, Cajun seasoning, bay leaves, salt, and black pepper. Bring to a simmer.

Simmer
Reduce the heat to low and let the etouffee simmer uncovered for about 20-25 minutes, stirring occasionally. Adjust seasoning as needed.

Remove bay leaves before serving. Serve the crawfish etouffee over cooked rice and garnish with chives or green onions.
