Make the Filling

Prepare the Filling
In a medium bowl, combine the cooked crawfish, chopped green onions, minced garlic, Cajun seasoning, and softened cream cheese. Mix well until the filling is smooth and well combined. Set aside.

In a large bowl, whisk together the all-purpose flour, baking powder, salt, and sugar until evenly mixed.

Form the Dough
Gradually add the wet ingredients to the dry ingredients, stirring until a soft dough forms. Do not overmix.
Assemble the Beignets

Shape the Beignets
On a floured surface, roll out the dough to about 1/2 inch thick. Cut out circles using a biscuit cutter or a glass.

Fill the Beignets
Place a spoonful of the crawfish filling in the center of each dough circle. Fold the dough over to encase the filling and pinch the edges to seal tightly.

Heat the Oil
In a heavy pot or deep fryer, heat the vegetable oil to 350°F (175°C). Ensure there is enough oil to submerge the beignets.

Fry the Beignets
Carefully drop the filled beignets into the hot oil, a few at a time, and fry until golden brown, about 3-4 minutes per side. Use a slotted spoon to remove them and drain on paper towels.

While the beignets are still warm, dust with powdered sugar to taste before serving.
