Preparation

    Prepare the Chicken

    Season the chicken pieces with salt and black pepper. Set aside.

    Cook the Bacon

    In a large heavy pot or Dutch oven, cook the diced bacon over medium heat until crispy. Remove the bacon and set aside, leaving the fat in the pot.

Cooking

    Sear the Chicken

    In the same pot with the bacon fat, add olive oil if needed. Sear the chicken pieces in batches until browned on all sides. Remove the chicken and set aside.

    Sauté Vegetables

    Add the chopped onions and sliced carrots to the pot. Sauté until they begin to soften, about 5 minutes. Add the minced garlic and quartered mushrooms, cooking for another 3-4 minutes.

    Deglaze and Braise

    Pour in the red wine, scraping the bottom of the pot to deglaze. Add the chicken broth, thyme, bay leaves, and the reserved bacon. Bring to a simmer.

    Add Chicken and Simmer

    Return the seared chicken to the pot. Cover and let it simmer on low heat for about 1 hour, or until the chicken is tender.

Finishing Touches

    Adjust Seasoning

    Taste and adjust seasoning with salt and additional black pepper as desired.

    Serve

    Serve the Coq au Vin hot, garnished with fresh thyme if desired. Pair it with crusty bread or mashed potatoes.
