Prepare the Chicken
Season the chicken pieces with salt and black pepper. Set aside.

Cook the Bacon
In a large heavy pot or Dutch oven, cook the diced bacon over medium heat until crispy. Remove the bacon and set aside, leaving the fat in the pot.

Deglaze and Braise
Pour in the red wine, scraping the bottom of the pot to deglaze. Add the chicken broth, thyme, bay leaves, and the reserved bacon. Bring to a simmer.

Add Chicken and Simmer
Return the seared chicken to the pot. Cover and let it simmer on low heat for about 1 hour, or until the chicken is tender.

Adjust Seasoning
Taste and adjust seasoning with salt and additional black pepper as desired.

Serve the Coq au Vin hot, garnished with fresh thyme if desired. Pair it with crusty bread or mashed potatoes.
