Method
Mousse Preparation
- 1
Melt the Chocolate
Chop the dark chocolate and place it in a heatproof bowl. Add the unsalted butter. Melt them together over a pot of simmering water (double boiler method) until smooth. Stir occasionally.
- 2
Beat the Eggs
In a separate bowl, whisk the eggs and granulated sugar together until the mixture is pale and thick. This should take about 5 minutes using an electric mixer.
- 3
- 4
Fold the Mixture
Using a spatula, gently fold the chocolate mixture until well combined, being careful not to deflate the eggs.
- 5
Chill the Mousse
Pour the mousse mixture into individual serving cups or a large bowl. Cover with plastic wrap and refrigerate for at least 2 hours, or until set.
Whipped Cream Preparation
- 6
Whip the Cream
In a mixing bowl, combine the heavy cream, powdered sugar, and vanilla extract. Using an electric mixer, whip the cream until stiff peaks form, about 3-5 minutes.
- 7
Serve
Once the mousse is set, remove it from the refrigerator. Top each mousse serving with a generous dollop of whipped cream and serve immediately.
