    Preheat your oven to 400°F (200°C). Pat the pork tenderloin dry with paper towels. In a small bowl, mix olive oil, minced garlic, chopped rosemary, salt, and black pepper. Rub this mixture all over the pork tenderloin.

    Transfer the skillet with the seared pork to the preheated oven. Roast for about 20-25 minutes or until the internal temperature reaches 145°F (63°C).

    While the pork is roasting, use the same skillet (remove excess fat if necessary) and add diced shallots. Sauté for 2-3 minutes until translucent. Pour in the red wine and beef broth, scraping the bottom of the skillet to deglaze. Let it simmer until reduced by half.

    Once reduced, stir in Dijon mustard and butter, mixing until the butter is melted and the sauce is smooth. Season with salt and pepper to taste.
