Prepare the seafood
Rinse the white fish fillets, mussels, and shrimp under cold water. Pat dry with paper towels and set aside.

Add garlic and tomatoes
Stir in the minced garlic and diced tomatoes, cooking for an additional 3-4 minutes until the tomatoes begin to break down.

Add fish stock and seasonings
Pour in the fish stock, add the saffron threads, thyme, salt, and pepper. Bring to a simmer and cook for 10 minutes to let the flavors meld.

Cook the seafood
Add the white fish fillets and mussels to the pot, cover, and cook for 5 minutes. Then, add the shrimp and continue to cook for another 5 minutes until the seafood is cooked through and mussels have opened.
Serving

Plate and garnish
Ladle the bouillabaisse into bowls, garnish with fresh parsley, and serve with lemon wedges on the side.
