Method

Preparation

  1. 1

    Prepare the seafood

Rinse the white fish fillets, mussels, and shrimp under cold water. Pat dry with paper towels and set aside.

  2. 2

    Chop the vegetables

Chop the onion, slice the leek, and fennel, mince the garlic, and dice the tomatoes.

Cooking

  1. 3

    Sauté the vegetables

In a large pot, heat the olive oil over medium heat. Add the chopped onion, leek, and fennel, and sauté until softened, about 5 minutes.

  2. 4

    Add garlic and tomatoes

Stir in the minced garlic and diced tomatoes, cooking for an additional 3-4 minutes until the tomatoes begin to break down.

  3. 5

    Add fish stock and seasonings

Pour in the fish stock, add the saffron threads, thyme, salt, and pepper. Bring to a simmer and cook for 10 minutes to let the flavors meld.

  4. 6

    Cook the seafood

Add the white fish fillets and mussels to the pot, cover, and cook for 5 minutes. Then, add the shrimp and continue to cook for another 5 minutes until the seafood is cooked through and mussels have opened.

Serving

  1. 7

    Plate and garnish

Ladle the bouillabaisse into bowls, garnish with fresh parsley, and serve with lemon wedges on the side.
