Dough Preparation

    Activate the Yeast

    In a small bowl, combine the warm milk (about 110°F) and active dry yeast. Let it sit for about 5-10 minutes until it becomes frothy.

    Mix Dry Ingredients

    In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, and salt.

    Combine Wet Ingredients

    In a separate bowl, beat the egg. Add the melted butter (cooled), activated yeast mixture, and vanilla extract. Mix well.

    Form the Dough

    Pour the wet mixture into the dry ingredients and stir until a wet dough forms. Knead the dough on a floured surface for about 5 minutes until smooth.

    Let the Dough Rise

    Place the dough in a greased bowl, cover it with a clean cloth, and let it rise in a warm area for about 1-2 hours, or until doubled in size.

Frying

    Prepare the Oil

    In a deep frying pan or pot, heat the vegetable oil to 350°F (175°C). Use a thermometer to ensure the correct temperature.

    Shape the Beignets

    Once the dough has risen, punch it down and turn it out onto a floured surface. Roll it out to about ½ inch thick and cut it into squares (about 2-3 inches each).

    Fry the Beignets

    Carefully drop the squares into the hot oil in batches, making sure not to overcrowd the pan. Fry for about 2-3 minutes on each side until golden brown.

    Drain and Dust

    Using a slotted spoon, remove the beignets from the oil and let them drain on paper towels. While still warm, dust generously with powdered sugar.
