Prepare the Ingredients
Cut the beef chuck roast into 2-inch cubes. Season with salt and black pepper. Chop the carrots into large chunks, slice the onions into wedges, and mince the garlic cloves. Clean and slice the mushrooms. Cut the bacon into small pieces.

Sauté the Bacon
In a large Dutch oven or heavy pot, cook the bacon over medium heat until crispy. Remove the bacon and set aside, leaving the drippings in the pot.

Brown the Beef
In the same pot, add the beef cubes in batches, browning them on all sides. Remove and set aside with the bacon.

Thicken the Sauce
Sprinkle the flour over the meat and vegetables. Stir well to combine and thicken the sauce.

Slow Cook
Bring the mixture to a simmer, then cover and reduce the heat to low. Let it cook for about 2 to 2.5 hours, or until the beef is tender.
