Combine and chill
In a clean jar or bottle combine 4 oz limoncello and 4 oz simple syrup. Add 1 tablespoon fresh lemon zest if using. Stir or shake until fully mixed. Refrigerate at least 30 minutes to meld flavors. Strain out zest before using if you added it.
Cocktail Assembly
Chill a large wine glass by filling with ice and water for 1–2 minutes, then discard the water and leave 1/3 cup of fresh ice cubes in the glass.
Pour 1.5 oz Aperol over the ice.
Add 0.5 oz limoncello syrup (use more or less to taste; this is the bright sweet element that differentiates Fred’s Spritz).
Top with 1 oz chilled soda water to open the drink and balance the sweetness and bitterness.
Stir once gently with a bar spoon (1–2 revolutions) to integrate ingredients without flattening the bubbles.
Garnish with an orange wheel: lightly squeeze the wheel over the drink to release oils, then drop it into the glass or slot it on the rim.
Serve immediately with a straw or cocktail pick if desired.
