Prepare glass
Choose a large wine glass or Coupe and fill it with 4–6 large ice cubes so the glass chills while you gather ingredients.
Measure and add Aperol
Pour 3 oz of Aperol into the chilled glass over the ice. This creates the bitter-sweet base of Fred's Spritz.
Add Prosecco
Slowly add 3 oz of chilled Prosecco. Pour gently down the side of the glass to preserve bubbles.
Top with soda
Float 1 oz of chilled soda water on top to lengthen the drink and add effervescence. Stir gently once with a bar spoon (one or two slow rotations) to combine without flattening the bubbles.
Garnish and finish
Express an orange wheel over the drink (squeeze the peel edge slightly to release oils) and drop the wheel into the glass. If using, add 2 dashes of orange bitters and a mint sprig for aroma. Give a final gentle stir.
