Juice and combine

Juice a fresh lemon until you have about 3/4 oz (roughly half a medium lemon). Measure 2 tablespoons Empress 1908 Gin and 1/2 teaspoon simple syrup. Add the gin, lemon juice and simple syrup to a cocktail shaker.

Add ice and shake

Fill the shaker with ice (about 1 cup). Secure the lid and shake vigorously for 10–15 seconds until the outside of the shaker is cold and slightly frosty. This chills and dilutes the mixture properly.

Strain

Double-strain the shaken mixture through a julep or fine mesh strainer into a chilled champagne flute or coupe. Double-straining removes small ice chips and pulp for a clean finish.

Fizz & Finish

Top with Prosecco

Carefully top the strained gin-lemon mixture with 3 oz chilled prosecco. Pour slowly down the side of the glass to preserve carbonation and create a gentle layer of bubbles.

Garnish and serve

Express a lemon twist over the drink to release essential oils, rim the glass with the twist if desired, then drop it in as a garnish. Serve immediately while the prosecco is lively.
