    Prepare greens

    Place the mixed salad greens in a large salad bowl. If greens are pre-washed and packaged, fluff them gently with your hands to separate any clumps. If not, rinse thoroughly in cold water, spin or pat dry, and then add to the bowl.

    Prepare carrot

    Peel the carrot, then either julienne (cut into matchsticks) or use a vegetable peeler to make thin ribbons. Add the prepared carrot to the bowl with the greens.

    Prepare tomatoes

    Rinse the cherry tomatoes, cut each in half (or quarters if very large), and add them to the salad bowl.

    Add herbs

    If using fresh herbs, stack and roll the leaves, thinly slice (chiffonade) or chop, then sprinkle over the salad.

Simple Vinaigrette

    Combine dressing ingredients

    In a small bowl or jar, combine lemon juice, red wine vinegar, Dijon mustard, honey (or maple syrup), salt, and black pepper. Whisk briefly to combine.

    Emulsify

    Slowly drizzle in the olive oil while whisking continuously (or add oil to the jar, close, and shake vigorously) until the dressing is smooth and slightly thickened and the oil is fully incorporated.

    Adjust seasoning

    Taste the vinaigrette and adjust seasoning as needed — add a pinch more salt, a squeeze more lemon, or a touch more honey to balance acidity and sweetness.

    Dress the salad

    Pour the vinaigrette over the salad just before serving — start with about half, toss gently to coat the greens evenly, then add more if needed to lightly dress the salad without wilting the leaves.
