In a medium bowl, combine the soft goat cheese and softened cream cheese. Use a fork or small spatula to mash and blend until smooth and homogenous.

Cover the mixture and chill in the refrigerator for at least 30 minutes. Chilling firms the mixture so it can be shaped.

Forming the Croquettes
After chilling, portion the cheese mixture into 12 even pieces (about 1 tablespoon each). Roll each portion into a smooth ball or small log (roughly 1 to 1 1/4 inches diameter). Place shaped croquettes on a tray lined with parchment and return to the fridge for 10–15 minutes to firm further.

Working one at a time, dredge each chilled cheese ball first in flour (shake off excess), then dip into the egg wash, allowing excess to drip, and finally roll in the breadcrumb mixture to coat completely. For a thicker crust, repeat the egg and breadcrumb step once more (double-coat). Place breaded croquettes on a tray and refrigerate for another 10 minutes to set the coating.

Pour oil into a heavy-bottomed skillet or saucepan to a depth of about 1 to 1 1/2 inches (roughly 2 cups). Heat oil over medium heat until it reaches 350°F (175°C). If you don't have a thermometer, test by dropping a small breadcrumb into the oil—if it sizzles and browns in about 30–40 seconds, the oil is ready.

Fry the croquettes in batches (do not overcrowd) for about 2 to 3 minutes per side, turning gently with a slotted spoon or tongs, until golden brown and crisp. Total fry time per croquette is about 4–6 minutes depending on size and oil temperature.

Use a slotted spoon to transfer fried croquettes to a wire rack set over a baking sheet or to paper towels to drain. Keep croquettes warm in a low oven (about 200°F / 95°C) while frying remaining batches.
