Burger Patties

    Form patties

    Divide the ground beef into one 8-ounce portion. Gently form into a round patty about 3.5–4 inches (9–10 cm) across and about 3/4 to 1 inch thick. Do not overwork the meat — handle minimally so the burger stays tender. Make a shallow dimple in the center with your thumb to reduce springing up while cooking.

    Season both sides of the patty with the kosher salt and freshly ground black pepper just before cooking. Press the seasoning lightly into the meat so it adheres.

    Cook to medium

    Heat a heavy skillet (cast iron preferred) over medium-high heat until hot, about 3–4 minutes. Add the vegetable oil and swirl to coat. Place the patty in the skillet. Cook undisturbed for 4 minutes to form a good sear. Flip once and cook for an additional 3 minutes for medium doneness (internal temperature about 140–145°F / 60–63°C). If your stove or pan runs hot, reduce the second side time by 30 seconds to avoid overcooking. Use an instant-read thermometer to confirm temperature.

    During the last 30–45 seconds of cooking, place the cheddar cheese slice on the patty and cover the pan with a lid or tent with foil to melt the cheese evenly.

    Remove the patty to a plate and let rest for 3–4 minutes. Resting allows juices to redistribute and helps keep the burger juicy.

Toppings & Assembly

    Toast the bun

    While the burger rests, spread the unsalted butter on the cut faces of the bun. Return the skillet to medium heat and toast the bun, buttered side down, for 30–60 seconds until golden and slightly crisp. Remove from heat.

    Spread the mustard and ketchup on the bottom or top bun as desired.

    Place the rested, cheese-topped patty on the bottom bun. Add the lettuce leaf on top of the patty (or beneath, per preference), then arrange the tomato slices and optional pickle slices. Sprinkle a small pinch of flaky salt and the 1/8 tsp black pepper over the tomato to boost flavor.

    Cap with the top bun and press gently to assemble. Serve immediately.

Finishing & Serving

    Transfer the assembled cheeseburger to a plate. If desired, serve with a side of fries or a simple salad. Provide condiments on the side for extra ketchup, mustard or pickles.
