Rinse and dry
Rinse the cherry tomatoes and basil leaves under cold water. Pat the tomatoes and basil leaves very dry with paper towels or a clean kitchen towel to prevent diluting the dressing and to help basil stay vibrant.

Drain mozzarella
Drain the baby mozzarella balls in a fine-mesh sieve or on paper towels for a few minutes to remove excess liquid. If the mozzarella balls are larger (bocconcini), halve them so each lollipop has a bite-sized piece.

Thread components
Using one wooden skewer per lollipop, thread in this order: one mozzarella ball, one fresh basil leaf (folded if large), and one cherry tomato. Push components so they sit snugly but not crushed. Repeat to make 24 lollipops.

Place assembled lollipops on a serving platter, standing upright by leaning them against one another or laying them flat in neat rows if preferred.

Make dressing
In a small bowl, whisk together the extra-virgin olive oil, balsamic glaze, sea salt, freshly ground black pepper and dried oregano (if using) until combined. Taste and adjust seasoning: add a touch more balsamic glaze for sweetness or more oil to mellow.

Drizzle and garnish
Lightly drizzle the dressing over the arranged lollipops. If you want cleaner presentation, lightly brush the olive oil onto the mozzarella and tomatoes with a pastry brush and then drizzle balsamic glaze sparingly on top. Finish with a final small pinch of sea salt and a grind of black pepper over the platter. If using, grate the lemon zest finely over the lollipops for a bright citrus note.

If transporting or serving later, keep dressing separate and drizzle just before serving to keep basil from wilting and mozzarella from weeping. For a sweeter balsamic accent, use a reduction or high-quality thick balsamic glaze.
