    Cook the Lasagna Noodles

    Bring a large pot of salted water to a boil. Add lasagna noodles and cook according to package instructions until al dente. Drain and set aside.

    Prepare the Cheese Mixture

    In a mixing bowl, combine ricotta cheese, egg, Parmesan cheese, salt, black pepper, and chopped basil. Mix until well combined and set aside.

    Sauté the Vegetables

    In a large skillet, heat a tablespoon of olive oil over medium heat. Add zucchini, mushrooms, bell pepper, and spinach. Sauté until vegetables are tender, about 5-7 minutes. Remove from heat.

    Layer the Ingredients

    In a 9x13 inch baking dish, spread a thin layer of marinara sauce on the bottom. Place 3 lasagna noodles on top. Spread half of the cheese mixture over the noodles, followed by half of the sautéed vegetables. Add a layer of marinara sauce. Repeat the layers (noodles, cheese, vegetables, sauce). Finish with a final layer of noodles topped with remaining marinara sauce and sprinkle with extra Parmesan cheese if desired.

    Bake the Lasagna

    Cover the baking dish with aluminum foil and bake in a preheated oven at 375°F (190°C) for 25 minutes. Remove the foil and bake for an additional 15-20 minutes, or until the cheese is bubbly and golden. Allow to cool for 10 minutes before serving.
