Prepare the Crust
Preheat your oven to 350°F (175°C). In a medium bowl, mix together the graham cracker crumbs, granulated sugar, and melted butter until well combined.

Press the Crust
Press the mixture firmly into the bottom of a 9-inch springform pan. Make sure it is even and compact. Bake in the preheated oven for 10 minutes. Remove from oven and let it cool.

Mix the Filling
In a large mixing bowl, beat the softened cream cheese with an electric mixer on medium speed until smooth and creamy, about 2-3 minutes.

Add Sugar and Sour Cream
Add the granulated sugar, sour cream, and vanilla extract to the cream cheese. Mix until well combined.

Incorporate the Eggs
Add the eggs one at a time, mixing on low speed until just blended after each addition. Do not overmix.

Pour into Crust
Pour the cheesecake filling over the cooled crust in the springform pan. Smooth the top with a spatula.

Bake the Cheesecake
Bake in the oven at 325°F (160°C) for 50-60 minutes, or until the center is set and only slightly jiggly. Turn off the oven, crack the door, and let the cheesecake cool in the oven for 1 hour.

Chill
Remove the cheesecake from the oven and let it cool to room temperature. Cover and refrigerate for at least 4 hours, preferably overnight.
Fruit Glaze

Prepare the Glaze
In a small saucepan over medium heat, combine the mixed berries, granulated sugar, cornstarch, water, and lemon juice.

Cook the Glaze
Cook while stirring gently until the mixture comes to a boil and thickens, about 5-7 minutes.

Cool the Glaze
Remove from heat and let the glaze cool to room temperature.

Top the Cheesecake
Once the cheesecake is set and chilled, pour the fruit glaze over the top, spreading it evenly.
