Method
Budino Preparation
Melt the Chocolate and Butter
In a medium saucepan, over low heat, combine the bittersweet chocolate and unsalted butter. Stir constantly until melted and smooth. Remove from heat and let cool slightly.
Mix in Sugar and Eggs
Add granulated sugar to the melted chocolate mixture and stir until well combined. Add the eggs, one at a time, beating well after each addition. Stir in vanilla extract and sea salt until fully incorporated.
Prepare the Baking Dish
Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan with butter and line the bottom with parchment paper for easy removal.
Bake the Budino
Pour the chocolate mixture into the prepared cake pan. Bake for 25-30 minutes or until the center is set but still slightly jiggly. Remove from oven and let cool completely in the pan on a wire rack.
Serving Preparation
Prepare the Topping
Once the budino has cooled, carefully invert it onto a serving plate. Drizzle with extra virgin olive oil and sprinkle with coarse sea salt.
Slice and Serve
