Make the mixture
In a large mixing bowl combine ground beef and ground pork. Add bread crumbs, egg, Worcestershire sauce, minced onion, minced garlic, kosher salt, black pepper, and smoked paprika. Use your hands to gently mix until just combined — avoid overworking to keep patties tender.

Form patties
Divide the mixture into 8 equal portions (about 2 ounces each). Lightly shape each portion into a thin, round patty slightly larger than the mini buns (they will shrink while cooking). Press a shallow dimple in the center of each patty to prevent doming.

Cook patties
Heat a large skillet or griddle over medium-high heat. Add vegetable oil and swirl to coat. When hot, place patties in a single layer without crowding. Cook 2–3 minutes on the first side until a brown crust forms. Flip and cook another 1–2 minutes. During the last minute of cooking, place a slice of cheddar on each patty and cover the pan with a lid or tented foil to melt the cheese. Internal temperature should reach 160°F (71°C). Transfer cooked patties to a plate and tent with foil to keep warm.

Prepare buns
Split the slider buns horizontally. In a small bowl combine softened butter with a pinch of salt if desired and spread butter on the cut sides. Heat a clean skillet or griddle over medium heat and toast the buttered cut sides until golden, about 1–2 minutes. Remove from heat.

Assemble condiments
In a small bowl mix mayonnaise and mustard (reserve some mayonnaise for the optional sauce if using). Place lettuce leaves on bottom halves of buns, then add a warm cheesy patty on top of each lettuce leaf. Add a pickle slice and a few rings of red onion to each. Spread a thin layer of mustard on the top buns (or spread the quick burger sauce if using) and cover the sliders.

Serve
Arrange sliders on a serving platter. If serving family-style, secure each slider with a toothpick. Serve immediately while patties are hot and cheese is melted.
Optional Sauce (Quick Burger Sauce)

Whisk together ketchup, mayonnaise, sweet pickle relish, apple cider vinegar and paprika in a small bowl until smooth. Taste and adjust seasoning. Use as a spread on the top buns or serve on the side for dipping.
