Slider Patties

    Mix and portion

    Place the ground beef in a large bowl. Add kosher salt, black pepper, Worcestershire sauce, garlic powder, and onion powder. Gently combine with your hands or a spatula just until evenly mixed; do not overwork the meat. Divide the mixture into 8 equal portions (about 2 ounces each) and gently form into loose, slightly flattened patties roughly the diameter of the slider buns plus a little shrinkage allowance.

    Chill (optional)

    If time allows, place the formed patties on a tray, cover lightly, and refrigerate for 15–20 minutes to help them hold together while cooking. This step is optional but recommended for cleaner searing.

    Cook

    Heat a large skillet or griddle over medium-high heat and add the vegetable oil, swirling to coat. When the pan is hot and shimmering, add patties in a single layer without crowding (work in batches if needed). Cook for 2 minutes undisturbed to form a crust, then flip and cook 1½–2 minutes more for medium (adjust time for desired doneness). During the last 30–45 seconds of cooking, place a halved American cheese slice over each patty and cover the pan with a lid to melt the cheese quickly.

    Rest

    Transfer cooked patties to a plate and let rest 2 minutes while preparing buns and assembly.

Buns & Toppings

    Prepare buns

    Split the slider buns horizontally. Spread softened butter on the cut faces of both the tops and bottoms. Heat a clean skillet or griddle over medium heat and toast buttered sides of the buns for 30–60 seconds until golden and slightly crisp. Remove and keep warm.

    Optional sauce

    If using the quick sauce, mix mayonnaise, sweet pickle relish, hot sauce, and lemon juice in a small bowl until combined. Spread about 1 tsp of the sauce on the bottom half of each bun (or use ketchup/mustard as preferred).

    Assemble sliders

    Place a lettuce leaf on each bottom bun, add a cheese-topped patty, top with a pickle chip and a few slices of red onion. Add a small dab of mustard and/or ketchup to the top bun (or use the prepared sauce). Close the slider and press gently to hold together.

    Serve

    Arrange sliders on a platter and serve hot. Provide extra pickles, ketchup, mustard, and napkins on the side.

    Combine mayonnaise, sweet pickle relish, hot sauce, and lemon juice in a small bowl and stir until smooth. Adjust seasoning to taste. Use immediately or refrigerate up to 3 days.
