    Prep potatoes

    Peel the russet potatoes and cut them into uniform 1–2 inch cubes so they cook evenly.

    Place in pot

    Put the potato cubes in a large saucepan or pot and add cold water to cover by about 1 inch (approximately 1–1.5 L depending on pot size).

    Salt the water

    Stir in 1 tablespoon kosher salt into the water to season the potatoes while they cook.

    Bring to a simmer and cook

    Bring water to a gentle boil over high heat, then reduce to a simmer. Cook the potatoes until tender when pierced with a fork, about 12–18 minutes depending on cube size.

    Drain and steam-dry

    Drain potatoes in a colander thoroughly. Return them to the hot pot off heat and let them sit, uncovered, 1–2 minutes so excess water evaporates (this helps avoid watery mash).

Finishing Dairy & Flavor

    Warm dairy and infuse garlic (optional)

    While potatoes cook, combine milk and heavy cream in a small saucepan and warm over low heat until steaming but not boiling. If using garlic, add the crushed clove to the milk mixture to infuse for 5–7 minutes, then discard the clove before using.

    Mash potatoes

    Return the drained, slightly steamed potatoes to the pot or a large bowl. Using a potato masher, ricer, or food mill, mash the potatoes to your desired texture (for very smooth, use a ricer or food mill; for a bit of texture, use a masher).

    Add butter

    Add the 4 tablespoons of butter to the hot mashed potatoes and stir until melted and incorporated.

    Add warmed dairy gradually

    Pour the warmed milk/cream mixture over the mashed potatoes a little at a time, stirring after each addition, until you reach the desired consistency. You may not need all the liquid.
