Make the concentrated tea
Bring 8 cups water to a near boil in a kettle or saucepan. Remove from heat and add 4 black tea bags (or 4 tablespoons loose-leaf black tea in an infuser). Steep for 5 to 7 minutes for strong flavor, then remove tea bags or strain leaves. While tea is still warm, stir in 1 cup granulated sugar until fully dissolved. Add 2 tablespoons fresh lemon juice to brighten the flavor. Let the sweetened tea cool to room temperature, then refrigerate until chilled (about 30–45 minutes) or use cooled tea immediately.

Prepare the fruit
If using mango: peel, pit, and roughly chop enough ripe mango to measure 2 cups. If using peach: blanch in boiling water 15–30 seconds to loosen skins, transfer to ice bath, peel, pit, and chop to make 2 cups.

Puree the fruit
Place the 2 cups chopped fruit in a blender with 1 cup hot water (optional — use to help blend if fruit is very firm or to thin puree). Add 1/2 teaspoon vanilla extract for peach or 1/2 teaspoon pinch of salt for mango, if using. Puree until completely smooth, about 30–60 seconds. Taste and add up to 1–2 tablespoons sugar if fruit is not sweet enough (optional). Strain the puree through a fine-mesh sieve into a bowl to remove fibers if you prefer a very smooth iced tea, pressing with the back of a spoon; discard solids.
Assemble & Serve

Combine the chilled sweetened tea and fruit puree. Start by pouring about 6 cups chilled tea into a large pitcher, then add the fruit puree. Stir well to combine. Taste and adjust sweetness: if the tea is too strong or concentrated, add remaining chilled tea (from reserved amount) or a little cold water. If you want a brighter fruit flavor, add more puree in 1/4-cup increments until your preference is reached.

Fill glasses with ice cubes. Pour the mango or peach iced tea over ice. Garnish with sliced fresh mango or peach and a sprig of fresh mint. Serve immediately.

Storage: Refrigerate leftover tea in a sealed pitcher for up to 3 days. Stir before serving. Fresh fruit garnish is best added just before serving.
