Creamy Mashed Potatoes

Prep and boil potatoes
Peel (optional) and cut potatoes into even 1–1.5 inch chunks. Place in a large pot and cover with cold water by about 1 inch. Add 1 teaspoon of the salt. Bring to a vigorous simmer over high heat, then reduce to maintain a gentle boil. Cook until potatoes are very tender when pierced with a fork, about 15–20 minutes depending on size.

Heat milk and infuse garlic
While potatoes cook, combine whole milk, heavy cream, crushed garlic cloves and 3 tablespoons butter in a small saucepan. Warm over low heat until butter melts and garlic is fragrant, about 4–5 minutes; do not boil. Remove from heat and let garlic steep for 5 minutes, then remove garlic pieces (or leave for more flavor) and keep milk warm.

Mash and season
Drain potatoes thoroughly and return to the hot pot for 1 minute to evaporate excess moisture. Using a potato masher or ricer, mash potatoes to your desired texture. Stir in the warm milk-butter mixture a little at a time until creamy. Add remaining 3 tablespoons butter and the cream cheese (if using) and stir until fully incorporated. Season with remaining 1 teaspoon salt and freshly ground black pepper. Taste and adjust seasoning.

Finish
Fold in chopped chives or parsley. Keep warm covered until ready to serve, or transfer to a shallow serving bowl and dot with an extra tablespoon of butter.

Preheat and toss
Preheat a grill or grill pan to medium-high (about 400°F / 200°C). In a large bowl, combine sliced zucchini, bell peppers, onion wedges and carrots. Drizzle with olive oil, add garlic powder, dried oregano, 1 teaspoon salt and 1 teaspoon black pepper. Toss to coat evenly.

Prepare garlic butter
Preheat oven to 350°F (180°C) if rolls need warming. In a small bowl combine melted butter, minced garlic, chopped parsley and grated Parmesan (if using). Mix well.

Brush and bake
Place rolls on a baking sheet. Brush the tops generously with the garlic butter. If rolls are refrigerated or room temperature, bake for 6–8 minutes until warmed through and edges are slightly crisp. For pre-baked rolls, you can also broil 1–2 minutes to brown the tops—watch carefully to avoid burning.
