Tri-Tip & Marinade

    Prepare marinade

    In a medium bowl whisk together olive oil, soy sauce, Worcestershire, apple cider vinegar, brown sugar, smoked paprika, garlic powder, onion powder, black pepper and kosher salt until combined.

    Marinate tri-tip

    Place the tri-tip roasts in a large resealable bag or shallow dish and pour half of the marinade over them (reserve the other half for basting). Rub the marinade over the meat, remove excess air, seal, and refrigerate for at least 4 hours and up to overnight. If short on time, let rest at room temperature 30–60 minutes before cooking.

    Bring to room temperature

    Remove the tri-tip from the refrigerator 30–60 minutes before cooking to take the chill off and promote even cooking. Pat dry with paper towels and discard used marinade.

Cooking the Tri-Tip

    Preheat grill for two-zone cooking: one side medium-high (about 400°F/200°C) for searing, the other side medium/indirect heat (about 300°F/150°C) for finishing. If using oven, preheat oven to 375°F (190°C) and heat a heavy skillet over high heat for searing.

    Sear the tri-tip: brush the tri-tip lightly with reserved marinade and a bit of oil. Place the roast fat-side down on the hot direct heat and sear 3–4 minutes per side until a good crust forms (use tongs and sear edges as well).

    Finish cooking indirect: Move the tri-tip to indirect heat (or transfer to a roasting pan/skillet and place in the oven). Close grill lid and cook until internal temperature reaches 125°F (52°C) for medium-rare or 135°F (57°C) for medium, about 20–35 minutes depending on size. Rotate once for even cooking. Use an instant-read thermometer in the thickest part.

    Rest the meat: Transfer tri-tip to a cutting board and tent loosely with foil. Rest 15–20 minutes to allow juices to redistribute; internal temp will rise ~5°F.

Prepare Sauce & Basting

    Warm the BBQ sauce in a small saucepan over low heat with honey and optional minced chipotle, stirring until combined and slightly reduced, 3–5 minutes. Keep warm. This is the finishing/basting sauce for shredding and brushing the sliders.

Slice or Shred Tri-Tip

    Decide cut style: For classic tri-tip sliders slice thinly across the grain for tender slices. For pulled sliders, use two forks to shred the rested meat into bite-sized pieces. Both work; thin slices give a steak-like bite, shredded meat holds more sauce.

    If slicing: locate the grain direction (it changes in the triangular cut) and slice against the grain into 1/8–1/4-inch slices. If shredding: pull apart into small pieces and toss with 1 cup of the warmed BBQ sauce to coat lightly.

Slider Assembly

    Prep buns: Preheat oven to 350°F (175°C) or heat a large skillet. Brush the interior (and optionally the tops) of slider buns with melted butter.

    Toast buns: Arrange buns cut-side up on a baking sheet and toast in oven 5–7 minutes until edges are golden, or toast in a skillet until lightly browned.

    Assemble sliders: If using sliced meat, lightly brush slices with BBQ sauce. Place a portion of meat (about 1.5–2 oz for shredded, 2–3 slices for sliced) on the bottom half of each bun. Top with a small spoonful of extra BBQ sauce if desired, then a slice of cheddar (if using) and a pickle slice. Add about 1 tablespoon of coleslaw on top for crunch and tang. Cap with top bun and press gently.

    Finish: For party-style sliders, place assembled sliders on a sheet pan, brush tops with melted butter, and warm in oven 4–6 minutes to melt cheese and meld flavors. Sprinkle chopped parsley over the tops for color if desired.

Serving & Storage

    Serve immediately while warm with extra BBQ sauce on the side. Provide napkins—these sliders are saucy and flavorful.

    Storage: Refrigerate leftover sliced or shredded tri-tip in an airtight container up to 4 days. Reheat gently in a skillet with a splash of water or extra BBQ sauce, or warm in a low oven covered with foil.
