Sweat onion and garlic
Place a medium saucepan over medium heat and add 1 tablespoon water (or 1 tsp neutral oil if preferred). Add the grated onion and cook, stirring frequently, until softened and translucent about 4–5 minutes. Add the minced garlic and cook 30–45 seconds until fragrant, taking care not to brown.

Add tomato components
Stir in the tomato paste and cook 1 minute to caramelize slightly, then add the ketchup and water. Whisk to combine and bring mixture to a gentle simmer.

Add the brown sugar, molasses, honey, apple cider vinegar, Worcestershire sauce, and Dijon mustard to the saucepan. Whisk thoroughly so the sugar dissolves into the liquid and the paste is fully incorporated.

Add smoked paprika, black pepper, kosher salt, and chipotle powder (or cayenne). Stir to combine.
Simmer & Reduce

Reduce heat to low and let the sauce simmer gently, uncovered, stirring occasionally to prevent sticking, for 18–25 minutes. The sauce should thicken to a saucy, spreadable consistency (it will thicken more as it cools). If it becomes too thick, stir in up to 2 tablespoons water to reach desired texture.

Taste and adjust seasoning: add more salt or vinegar to brighten, more sugar for sweetness, or more chipotle/cayenne for heat. If using liquid smoke, stir it in at this stage (use sparingly).

Optional — swirl in 1 tablespoon butter off heat for a glossy finish and smoother mouthfeel. Let sauce cool for 10–15 minutes.

Transfer sauce to a sterilized jar or airtight container. Refrigerate. The flavors improve after sitting; use after at least 2–4 hours or overnight for best flavor.
