Make the Dough
In a large mixing bowl, combine the warm water and active dry yeast. Let it sit for about 5 minutes until frothy. Add the flour, salt, and olive oil. Mix until a dough forms.

Knead the Dough
Transfer the dough to a floured surface and knead for about 8-10 minutes until smooth and elastic. Place in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.

Preheat the Oven
Preheat your coal-fired oven to about 700°F (370°C). If you are using a conventional oven, preheat to the highest setting.

Shape the Pizza
Once the dough has risen, punch it down and divide it into 2 equal portions. Roll out each portion on a floured surface to about 12 inches in diameter.

Assemble the Pizza
Spread 1/2 cup of tomato sauce over each dough round. Sprinkle with mozzarella cheese, followed by Parmesan cheese, cooked sausage, and fresh basil. Add red pepper flakes to taste.

Bake the Pizza
Carefully transfer the pizza to the hot oven and bake for about 6-8 minutes, or until the crust is golden and the cheese is bubbling. Repeat with the second pizza.

Remove the pizza from the oven, let it cool for a minute, slice, and serve hot.
