Marinade Preparation
Make the Marinade
In a medium bowl, whisk together the olive oil, lemon juice, minced garlic, honey, dried oregano, salt, and black pepper until well combined.
Marinate the Chicken
Place the chicken breasts in a large resealable plastic bag or a shallow dish. Pour the marinade over the chicken, ensuring all pieces are well coated. Seal the bag or cover the dish, and refrigerate for at least 1 hour, preferably 4 hours or overnight for better flavor.
Grilling
Preheat the Grill
Preheat your grill to medium-high heat (about 375°F to 400°F).
Grill the Chicken
Remove the chicken from the marinade and discard any remaining marinade. Place the chicken breasts on the grill. Grill for 6-7 minutes on each side or until the chicken is cooked through and has nice grill marks. The internal temperature should reach 165°F.
Serving
Rest and Serve
Once cooked, remove the chicken from the grill and let it rest for 5 minutes. Serve garnished with chopped fresh parsley and lemon wedges.
