    Score and season

    Remove any excess moisture from the duck breasts with paper towels. Using a sharp knife, lightly score the skin in a diamond pattern without cutting into the meat. Season both sides generously with kosher salt and freshly ground black pepper, pressing the seasoning into the skin.

    Render and crisp skin

    Place a cold, heavy skillet (cast iron recommended) over medium-low heat. Place the duck breasts skin-side down in the dry skillet (add 1 tablespoon neutral oil only if skin is very lean). Cook slowly for 10–14 minutes, adjusting heat so the fat renders steadily and the skin turns deep golden brown and crisp. Tilt the pan and spoon off excess fat into a heatproof container as it accumulates.

    Finish in oven

    Once skin is crisp and most fat rendered, flip the breasts and sear the flesh-side for 1–2 minutes. Transfer the skillet to a preheated 400°F/200°C oven and roast until the thickest part reaches 125–130°F (52–54°C) for medium-rare, about 6–8 minutes depending on thickness. Remove from oven, transfer to a cutting board, tent loosely with foil and rest 8–10 minutes before slicing.

Black garlic soubise

    Sweat the onions

    In a heavy saucepan over medium heat, melt 2 tablespoons unsalted butter with 1 tablespoon olive oil. Add the thinly sliced onions and a pinch of salt. Cook gently, stirring frequently, until the onions are very soft and translucent and beginning to caramelize lightly — about 20–25 minutes. Reduce heat if they start to brown too quickly; the goal is a sweet, soft base.

    Deglaze and simmer

    Increase heat to medium-high, add 1 tablespoon dry white wine to deglaze the pan, scraping up any fond. Add the chicken stock, bay leaf and thyme sprigs. Bring to a simmer and cook uncovered until the liquid has reduced by roughly one-third, about 12–15 minutes.

    Add black garlic and cream

    Remove and discard the bay leaf and thyme stems. Lower heat to medium-low and stir in the mashed black garlic cloves. Add 1 cup heavy cream and continue to simmer gently for 6–8 minutes to meld flavors and slightly thicken. Taste and season with 1 teaspoon salt and 1/2 teaspoon ground black pepper, adjusting to preference.

    Purée and finish

    Transfer the onion and cream mixture to a blender or use an immersion blender; blend until very smooth and silky. Return the puréed soubise to the saucepan over low heat, whisk in 1 tablespoon butter to finish for sheen and mouthfeel. Keep warm while the duck rests. If sauce is too thin, simmer gently to reduce to desired consistency; if too thick, whisk in a splash of stock or cream.

Plating & finishing

    Slice the rested duck breasts thinly on a bias. Spoon a generous pool of warm black garlic soubise onto each plate.

    Fan slices of duck over the soubise, skin-side up so the crisp skin is visible. Drizzle a small amount of reserved duck fat or a teaspoon of sherry vinegar/balsamic over the meat if desired to brighten flavors.
