Prepare the Melons

Cut the Candew and Ambrosia melons in half and scoop out the seeds. Slice the flesh into bite-sized wedges and arrange on a serving platter.

Make the Jaew Sauce

In a small bowl, combine the Thai chili powder, fish sauce, lime juice, and palm sugar. Mix well until the sugar is dissolved.

Toast the Shallots

Thinly slice the shallots. In a skillet, heat olive oil over medium heat. Add the shallots and cook until golden brown and crispy. Remove from heat and drain on paper towels.

Assemble the Dish

Drizzle the Jaew sauce over the melon wedges. Add dollops of Straus yogurt on top, sprinkle with toasted shallots, and garnish with fresh mint leaves.
